Village Voices: Sweet Laurel Shares Its Famous Pumpkin Spice Bread Recipe Just in Time for Fall Festivities

After opening the doors of their first-ever brick-and-mortar location, Laurel Gallucci and Claire Thomas—hailed the “baking geniuses” behind the celebrity-acclaimed, health-conscientious Sweet Laurel—invited us into their bakery to talk sugar and spice, and everything nice for the festive months ahead.

Here at Sweet Laurel, we love pumpkin and cinnamon, and fall and winter are rarely complete without them! In the recipe below, you will see our simple, whole-food approach to baking with these seasonal favorites, coupled with a few other star players.

Our pumpkin is simply delicious, and is divine when paired with our Vegan Caramel (now sold in our Palisades Village store) and a cup of coffee. Added bonus: Pumpkin is filled with beta carotene, which is a beauty food, and cinnamon is a powerful antioxidant.

Sweet Laurel’s Pumpkin Spice Bread
Yields 4 to 5 mini loaves or two standard loaf pans

Ingredients
2 cups almond flour
1 tablespoon cinnamon
1 teaspoon ground ginger (optional)
1 teaspoon nutmeg (optional)
1 teaspoon baking soda
1/2 teaspoon Himalayan pink salt
1 cup pumpkin purée
1/2 cup maple syrup (or less to decrease sweetness)
1/4 cup melted coconut oil
2 eggs*
1/4 cup coconut milk or almond milk
1 tablespoon vanilla extract
1 teaspoon apple cider vinegar

Directions
Preheat oven 350°F.

Mix pumpkin, maple syrup, melted coconut oil, eggs, coconut milk, vanilla, and apple cider vinegar. Slowly add in flours, spices, baking soda, and salt.

Stir to combine, then pour into a standard-size loaf pan.

Bake for 30-40 minutes.

Cool completely, take out of pans, and enjoy!

* For a vegan option, substitute 2 eggs with 2 tablespoons of freshly ground flaxseed. For each tablespoon of flaxseed, add 3 tablespoons of water (total 9) and let it sit for about 10 minutes.

Watching Botanica Bazaar co-founders Leilani Bishop and Bethany Mayer glow as they graced the red carpet at the opening gala of Palisades Village got us thinking: What on earth is their secret to looking this radiant so close to Halloween?! Luckily they and the whole BB team had a few pointers to share, and we’re following them to a T.

For us, fall is all about transition. The biggest challenge with seasonal change is dryness and dullness in our skin—and in our skincare routines. Staying hydrated during the autumn months is key so that by the time winter comes around, we’re not covered in flakey, itchy skin. Our goal? To keep that summer glow all year-round.

When we look at tackling hydration we don’t just turn to the skin, but we also like to look within, mainly keeping hydrated from the inside out. Botanica has plenty of skin-loving supplements to boost collagen, hydration, and vitamins, all from the inside. A few of our internal favorites are Hydration from The Beauty Chef (super tasty probiotic elixir), goopglow (this one is a must!), and The Super Elixir Greens from WelleCo, which is loaded with gut-loving ingredients (because a happy gut is a happy you).

The Botanica staff also loves a good exfoliation after the summer sun to keep that glow going (after all, who doesn’t?). As Jennifer Meyer prepares to open her first-ever boutique, the Malibu-raised designer sat down with us to talk some serious shop.

There’s so much to love in fashion right now—where do I start?! I’m probably the most excited for Hedi Slimane’s debut collection with Celine. I really find everything he does to be classic and timeless. These will be my splurge-pieces of the season, for sure!

I recently went to Rachel Zoe’s Spring 2019 LA Presentation, and from the evening dresses to the suiting, each look was more beautiful than the last. I especially loved all the pink sparkle on her runway – I’m so drawn to pink! I’m really a girly-girl at heart, and have always been. You can see my love for pink throughout my line. I’ve always loved designing pieces with pink sapphires, and I just introduced pink opals in our newest collection!
